This region, and the city in particular, is widely known for it’s mezcal, chocolate, and mole; as well as the diverse indigenous groups still calling the Oaxaca Valley home after hundreds of years.

DAY 1

Welcome to Oaxaca

Welcome to Oaxaca and be ready to be delighted with one of Mexico’s most intricate cultures of Mexico. Upon arrival check into your hotel and enjoy an evening with a fabulous welcome dinner at one of the cities most authentic restaurants. 

DAY 2

VISITING MONTE ALBAN

Start your day with a traditional Oaxacan street breakfast of Torta de Tamal and/or fresh fruit and Chocolate Caliente. After breakfast we will visit one of the two most important sites in Mesoamerican history.

Monte Albán, site of ruins of an ancient centre of Zapotec and Mixtec culture, located in what is now Oaxaca state, Mexico. The initial construction at the site has been placed at circa 8th century BCE. It contains great plazas, truncated pyramids, a court for playing the ball game tlachtli, underground passageways, and about 170 tombs, the most elaborate yet uncovered in the Americas. Enjoy a late lunch at Conica de Lena in Portezuelo, you’ll be back in downtown Oaxaca by early afternoon. The rest of the day is to enjoy at your leisure.

DAY 3

DAY TRIP TO LA CAPITAL MUNDIAL DE MEZCAL SANTIAGO MATATLÁN

Enjoy a delicious Oaxacan breakfast at your hotel and depart to Santiago Matatlan the Capital of Mezcal. We will arrive at the Pulqueria and sample some of the traditional drinks such as AgualMiel, Pulque, and Tepache. You will enjoy a delicious lunch at Azul Adobe followed by learning more about the Mezcal process and tastings. You’ll end the experience by tasting the different types of Maguey and exemplify uniquite notes on the spectrum of Mezcal characteristics, such as flavor, aroma, age, process and region. You will be arriving back in town in the early evening. THE MEZCAL

PROCESS

The general process for mezcal production is integrated in various steps: harvesting and cutting agave, cooking, mashing, or milling to obtain agave juice rich in sugar, fermentation, first distillation, second distillation, cask maturation (if the mezcal is rested or aged), and finally the bottling.

NIGHT

The night will start with a walking tour of the city where you’ll get to drink and eat delicious Oaxacan food in this Oaxaca culture & culinary tour.

We’ll start at the Botanero Cantina for a round of beers and snacks before heading to Mezcalogia for a round of drinks (mezcal, cocktail, local craft beer) & live music in the heart of town before heading out to sample the city’s most popular late night eateries including; Lechoncito de Oro, Chefinita Tacos y Pozole, Libre’s Tlayudas. Your host is familiar with downtown nightlife and happy to mix in refueling stops along the way.

DAY 4

TLACOLULA & Teotitlan del Valle

Tlacolula de Matamoros is a city and municipality in the Mexican state of Oaxaca, which leads east to Mitla and the Isthmus of Tehuantepec. It is part of the Tlacolula District in the east of the Valles Centrales Region. You will have a walking tour of the Tlacolula Central Market and a delicious Barbacoa lunch. After lunch you’ll visit the Teotitlan del Valle and local market where you'll be able to buy many artisanal items for you to take back home as part of our Oaxaca culture & culinary trip package. You’ll arrive in Oaxaca in the early evening. Rest, reenergize and get ready for a delicious goodbye dinner at Casa Oaxaca.

DAY 5

AUTHENTIC OAXACAN COOKING CLASS

Learn about Oaxacan culinary culture as part of our Oaxaca culture & culinary tour package, using the freshest of ingredients that include both the familiar and the exotic, with a special focus on local herbs and chiles unique to Oaxaca. 

Chef Oscar sprinkles his lessons with tidbits about the history of Oaxacan cooking and its impact on the national and international gastronomy scene.

In a typical class you will learn how to make tortillas, create 3 different types of salsa, an appetizer, a soup, a mole, a dessert and a drink.

Sorry but, no. Stopped working after less than 1 week of use. They pre-install cheap batteries. I used it for a few days but then It wouldn’t turn on so I switched them out with fresh ones. Now the start/stop button isn’t working. Discovered during an extraction…arg!! Don’t mess with me while performing my craft! lol. Build quality is poor. Don’t over handle it, yeah, that’s how fragile it appears to be. I like that it is light weight but so light, I question if the durability and weight factor are compromising the output accuracy. Doesn’t feel reliable at all. I also question if this is waterproof, again, having everything to do with build quality. This is not my first scale but it is for coffee use so I’m on the hunt for a better one. This was cheap in price, yes. But as the old saying goes, you get what you pay for. One good thing that came out of this is, while it was working, I realized how much this was really needed for me to make exceptional and accurate espresso shots, so time to find a better one. I wanted this to work, I really did.

TLDR: Buy it. It works well, it has impressive and useful features, it looks great, it’s thin/low-profile, and it’s a great price. Detailed review: I’m very happy with this scale, and it has certainly upped my espresso game by leaps and bounds. I’m able to weigh my beans very precisely down to a tenth of a gram (roughly the weight of a single bean), so my dosing is on point. Also, it fits beneath the portafilter with room to spare for my cup, so I can weigh my shots and accurately measure my input/output ratio. And automatic mode is magic! When the espresso hits the cup, the timer starts running, so I can measure flow rate along with everything else! Overall, super easy to use and very necessary for the at-home barista. One caveat: It acted weird on the 2nd or 3rd day, and I thought I was going to have to return it. The weight would slowly creep up even though I wasn’t adding any coffee. I dusted it off, made sure it was dry, set it on a more stable surface… I still don’t know what the matter was, but it stopped freaking out and it hasn’t really given me any trouble since. Also, I should mention that the automatic function doesn’t always work 100% perfectly; it works, and usually works quite well, but depending on the flow rate, you might get some drops dribbling into the cup and the timer not detect it right away. (I think the timer must be activated according to some sort of algorithm that looks for a certain increase in a certain amount of time, so a slower initial drip rate might not trigger it at first.) Also weirdly, it seems like about half of the time when the weight stops increasing (i.e., espresso stops flowing) , the timer pauses (as I think it’s supposed to do), but other times, the timer keeps running until you manually stop it. I don’t know… It’s a weird glitch, I guess, but it doesn’t really make any difference. The weight is accurate, and that’s the primary thing to keep an eye on. So, is it perfect? No, I guess not. But, it works extremely well and functions perfectly for my purposes. In fact, it’s a lot nicer and fancier than I expected – plus, it’s more affordable and more streamlined than its obvious rival the Acacia.
