Wild Aged White Tea Cake 2008 is a Fujian white tea made from wild tea tree leaves, naturally aged for over sixteen years. Wild tea trees grow without cultivation or pesticides, and their leaves tend to carry more depth and complexity than farmed tea. After sixteen years of careful storage, this cake has developed a soft, full-bodied character with sugarcane-like sweetness and a bright, clear liquor.

The tea is compressed into a traditional cake shape — you break off a piece for each session. This is one of those teas that rewards patience: it brews well for 12 infusions or more with gongfu method, and each infusion shows you something a bit different.

How it tastes

The liquor brews bright and clear despite its age. You'll notice sugarcane sweetness first, followed by a soft, rounded body that coats your mouth gently. There's none of the astringency you might expect — sixteen years has smoothed everything out. Later infusions bring out more depth and a lingering finish.

A note from Joanne: "This is the tea I bring out for visitors who ask 'what's the most interesting white tea you have?' The wild tree leaves give it a character that's hard to describe until you taste it. Many of our customers start with the 2012 Aged White Tea and then come back curious about something older — this is where that path leads. 

茶气 (chá qì):This is also one of those teas where you can experience what Chinese tea drinkers call 茶气 (chá qì) — tea energy. If you brew it quietly and pay attention to your body, you may notice a gentle warmth rising from inside, not from the hot water but from the tea itself. It's a subtle sensation — your palms might warm up, your back might feel a soft flush. Experienced tea drinkers look for this quality, and it's one reason aged teas from old trees are so valued. If you practise meditation, tai chi or qigong, you'll recognise it as a kind of internal energy. Not everyone notices it on the first session, but when you do, it changes how you think about tea."

Brewing instructions

Western brewing: 2.5g per 400ml teapot. 95°C water. Steep 3 minutes — up to 3 infusions.

Gongfu brewing: 5g per 150ml teapot. Pre-warm the vessel. 95°C water, steep 30–40 seconds for the first 4 infusions, add 10 seconds from the fifth. Up to 12 infusions.

Try this: After 2–3 infusions, transfer the wet leaves to a heat-resistant kettle and boil for 3 minutes. This draws out richer flavours and a rounder mouthfeel — well worth the extra step.

Storage

Store in an airtight container in a cool, dark place. White tea continues to evolve in storage, so this cake will keep developing if properly kept.
