「想造一種有價値的酒！」為了實現這個理想經過長時間摸索、終於找到兵庫県特A地區裡十分少見、東条秋津産的山田錦。而且使用這種山田錦之中最高級別的特上米。新澤醸造店使用自家精米機將原料米精米至29％、再經過長達40日的発酵期間。最初帶來順滑而且柔和的口感後、彷如香蕉或蜜瓜般那甜甜的果香。最後香氣和味道很快便散去、不會令人覺得味道太重。
「新澤釀造店」的堅持
有關日本酒的糖度：以一般市面售賣的特別純米酒中，純米吟釀級別的平均值為例，每100ML日本酒中約有糖分1.2g的時候，「伯樂星」的糖分卻只有約0.6g。在迎合逐年傾向口味偏甜的市場的同時，「伯樂星」的「約半分」理論卻始終不變。
以究極的食中酒為目標：「伯樂星」的甜味是不會掩蓋那些例如使用湯汁煮出來的、味道比較清淡的料理，而是只在料理的味道之下輕輕流過，並從而令料理所帶出的味道更能具體地浮現出來。這種「以日本酒清洗流走」的表現手法，對「伯樂星」來說，就是「與日本酒互相靠近」這種緣份之下有力地存在著。
有關「新澤釀造店」的設備：「新澤釀造店」引入了可以將溫度細微調整至0.1℃刻度的釡鍋。利用徹底溫度管理之下所做出來的蒸米，有濕滑感之餘卻能加熱直達米芯，綻放甘香。而以這樣的蒸米做出來的麴，更有著令人驚嘆的輕巧和彈力。

Absolutely love this Helsin 3-Tier Industrial Pipe Shelf! It completely transformed a blank wall in my home office into a stylish, functional display area that’s equal parts rustic charm and industrial cool.
