Dreissigacker Wunderwerk Riesling – gently matured for pure aromatics

The grapes for the Wunderwerk Riesling come from the biodynamically cultivated top sites of Bechtheim and Westhofen - Geyersberg, Kirchspiel and Morstein. Bechtheim stands for warm, sun-drenched sites that produce very powerful and complex wines. In contrast, the wines from the wind-open sites around Westhofen have a rather cool, particularly fresh style. The Dreissigacker Wunderwerk Riesling combines both. Dreissigacker's conviction that all wines should be bottled as gently as possible and with a lot of time is also reflected in the miracle of Riesling. The grapes were transported exclusively by drop pressure, and pumps were dispensed with in all work steps.

After the selective manual harvest, gently pressed with the feet, the berries rested on the mash for half a day and were then gently pressed for several hours. In order to emphasise the pure aromatics that the soils and vines of the top sites in Rhine-Hesse have, the must was then allowed to sediment without any fining or adulteration.

The long-matured Dreissigacker Wunderwerk Riesling

Fermented with the help of natural yeasts, the Dreissigacker Wunderwerk Riesling was aged 15% in large wooden barrels and 85% in stainless steel tanks. For 8 months, the Wunderwerk Riesling was stored on the full lees, then for 12 months on the fine lees. The yeast storage as well as the storage on the bottle for another three years give this Riesling a special harmony and power. The latter also stems from the aging in wood. This gives the wine additional depth and complexity. Fruit, complexity and the acidity typical of Riesling are emphasised by the ageing in stainless steel and complement each other wonderfully with the harmony of the proportion aged in wood.

Typical Riesling – Dreissigacker miracle with fish

Riesling goes perfectly with fish dishes. Therefore, a North Sea sole with boiled potatoes is recommended for the Dreissigacker Wunderwerk Riesling - a dish that is as simple as it is delicious, whose subtly salty aromas harmonize excellently with the multi-layered Wunderwerk. The vegetarian alternative, zucchini grilled in saffron butter with refreshing yoghurt sauce, is also a good choice for this Riesling.
