De Fausoni 2021 toont een combinatie van sappig rood fruit, kruiden, viooltjes en subtiele aardse tonen. De structuur is verfijnd maar energiek, met zijdezachte maar krachtige tannines en een minerale precisie die typisch is voor deze cru. De afdronk is lang, helder en harmonieus.
Vinificatie.
Handmatige oogst wordt gevolgd door spontane fermentatie met inheemse gisten en een lange maceratie op de schillen. De wijn rijpt ongeveer 24 maanden in grote houten botti, voornamelijk gebruikt hout om de elegantie van Nebbiolo te respecteren. Na botteling volgt korte flesrijping, zodat de structuur mooi integreert.
Het domein.
De Fausoni-wijngaard ligt in Nieve en levert wijnen met finesse, frisheid en helder rood fruit. Sottimano werkt volledig duurzaam, met respect voor bodemleven, natuurlijke vinificatie, lage interventie in de kelder en lange rijping om Nebbiolo’s delicate karakter volledig tot uitdrukking te brengen.
